Oreos.. ruining diets since 1912!

Look what  I found at the grocery store!

As if it wasn’t awesome having the red filling at Christmas, Oreo now has the mint green!  When did this happen?   Well, I bought a couple of each to stash in my pantry until after Thanksgiving!

I had too much fun taking pictures of these little diet saboteurs!  Ruining diets since 1912!

While taking this next photo my son walks in the kitchen and asks, “Mom why are you standing  on a chair taking pictures of Oreos?”  I really am losing it… too bad it’s not pounds!

Cooking Light’s Peanut Butter-Chocolate Chip Brownies

I am in love with Cooking Light’s Holiday Cookbook! I picked up a copy at the library, but judging from the 2 dozen sticky tabs I think I need to purchase my own book!    I know November is the season for pies, but what I was searching for was a  little chocolate ( dessert) that could be made in 1 bowl in a few minutes.  I found this one!   cooking light cookies .5

This peanut butter and chocolate chip brownies has NO BUTTER!  Yep, just I tablespoon of canola oil! So, it looks good “on paper,” meaning it is lower fat, but does it pass the taste test!   cooking light cookies 3

They were awesome!  I am used to making a huge batch of brownies, so when this recipe called for an 8×8 pan, I thought it would be devoured in seconds (by me)!  The surprise was that when I made less, it makes the “less” count more!  Does that make sense?   Here is the recipe!  This is my first time using this recipe app, so I hope it uploads!

Cooking Light's Peanut Butter-Chocolate Chip Brownies

Ingredients
  • 1 cup flour
  • ¼ cup semisweet mini chocolate chips
  • ¼ teaspoon baking soda
  • ⅛ teaspoon salt
  • ¾ cup sugar
  • ¼ cup brown sugar
  • ¼ cup creamy peanut butter
  • 1 tablespoon canola oil
  • 1 teaspoon vanilla
  • 1 large egg
  • 1 large egg white
Instructions
  1. Preheat oven to 350
  2. Coat bottom of an 8x8 pan with cooking spray (recipe says not to coat the sides, but I did)
  3. Mix all ingredients.
  4. Bake at 350 for 25 minutes.
