Best Recipe for Grass {Frosting}

Hi all~  Let me start with the need to put the word “grass”  in quotes or my favorite parentheses,  because in Colorado, “grass” has an entirely different meaning!  Ha!   Over the past year,   I have made batches of frosting in my  attempts to make the  “grass” frosting spread  all over Pinterest.  I have adjusted the butter, used  shortening, and worked with meringue powder!  And, my frosting never was firm enough to resemble grass. I always ended up with 6 cups of green (in this case it’s yellow, but it’s for a visual)!

And, then I found this recipe, that was just slightly different than ALL of the other buttercream recipes.  Of course,  my sister would suggest that maybe this is the best frosting because  I actually FOLLOWED the recipe!  Either way, this recipe from My Baking Addiction worked best!   I didn’t have clear vanilla so I used coconut extract?  Can I do that?

Best Buttercream Recipe for Grass Frosting

Ingredients
  • 4 sticks unsalted butter, softened
  • pinch of fine grain sea salt (I omitted)
  • 1 tablespoon clear vanilla extract (I used clear coconut extract)
  • 2 pounds powdered sugar, sifted (big surprise here- I didn't sift) ! ha!
  • 4-6 tablespoons heavy cream or milk ( I used skim milk)
  • I placed icing in refrigerator for an hour to firm it up.
Instructions
  1. I just mixed all the ingredients together until smooth and creamy!
  2. I cut this recipe in half because of my history of running icing. I still used 4 tablespoons of skim milk and it was perfect.

Snickerdoodle Cookies!

I found this recipe on Pinterest  from Texas Type A Mom after a quick Pinterest search!    My son was recently diagnosed with chocolate induced migraines, so I am trying to find alternatives to the classic chocolate chip cookie!

I made slight adjustments on the amount of sugar (in my lame attempt to justify “just one more”)  and the baking time based on my cranky oven!  And, I have a standing jar of cinnamon-sugar so I just dumped that in a bowl when it was time to roll (the dough)!

Snickerdoodle Cookies

Easy Snickerdoodle Classic
Ingredients
  • 1½ cups sugar
  • 1¾ cups flour
  • 2 eggs
  • ½ cup butter, melted
  • 2 tsp. vanilla extract
  • ½ teaspoon baking soda
  • 1 teaspoon cream of tartar
  • dash of salt
  • Mix separately:
  • 4 tablespoons sugar and 2 tablespoons cinnamon
Instructions
  1. Preheat oven to 400 degrees
  2. Mix together sugar, eggs, vanilla, and butter.
  3. Add flour, baking soda, salt, and cream of tartar.
  4. Once mixed, form dough into small balls ( mine were the size of a ping pong ball). Roll dough balls in the sugar/cinnamon mixture.
  5. Place on baking sheet. Bake 6-8 minutes depending on your oven.

The funniest part of this is when I saw the picture online I thought “oh wow, the cookies are in the shape of balls”  (when they are done).   So when I opened my oven and saw this I was like, “Oh, right.” Or should I say, “All right, all right, all right!”

These Snickerdoodle cookies were gone in minutes! And, I think my Australian Shepherd may have grabbed a few for a late night snack!
